The Cauliflower Craze: Healthy and Delicious at the Same Time?

There’s a new, trendy food that seems to be able to be transformed into every possible form of food there is- and it’s a veggie. The cauliflower craze has taken over the world of food, as it has allowed for delicious and healthy recipes that are centered around a vegetable. Using cauliflower as a substitute for other foods not only reduces calories but allows you to incorporate more veggies into your diet.

It is part of the cruciferous group of vegetables, which also includes broccoli, Brussel sprouts, kale, cabbage, bok choy and more. 

Cauliflower is a veggie full of nutrients that can help prevent many diseases, such as cancer and heart disease, and promote weight loss. 

The veggie is full of fiber which allows a feeling of fullness for the consumer, and it reduces and helps digestive issues.

Cauliflower is also rich in antioxidants, such as vitamin C, which helps boost the immune system, and vitamin K, which helps build bone tissue. 

Being rich in sulforaphane, cauliflower helps to slow the aging process, both physically and mentally. Cauliflower is also rich in choline, which aids metabolism and boosts brain development.

Although cauliflower is super healthy and people tend to associate healthy with “ew,” it can be deliciously made into a number of your favorite meals. 

One of the most common forms of cauliflower is cauliflower crust pizza. There are numerous restaurants out there that offer this crust as a delicious low-carb option, like SNAP Custom Pizza and Weirdough’s Custom Pizzeria in State College.

Another popular way in which cauliflower is used is cauliflower rice. It can be made at home with a head of cauliflower, cauliflower florets or it can be bought already riced in a bag- and good news- most cauliflower rice that comes in a bag can just be steamed in that same bag.

Cauliflower can also be substituted for chicken in almost every recipe that calls for it. For example, cauliflower hot wings are made with florets of cauliflower rather than actual chicken. 

To get more creative, there is even a recipe out there for General Tso’s cauliflower instead of General Tso’s chicken.

Another food that cauliflower is popularly substituted for is various types of pasta. It can be substituted for mac and cheese noodles all the way to chicken alfredo.
