DIY Breakfast: Your Daily Dose of Healthy

When you wake up in the morning, you hear a faint rumbling. As you become aware, you realize the rumbling is indeed your stomach. You’re going to need a good breakfast— and fast.

It’s too cold these days to hike around town in the hunt for the perfect breakfast. Sure, Au Bon Pain’s breakfast sandwiches are amazing. But why not stay in the comfort of your own home and create your own delicacy? That’s why Valley has some awesome and healthy breakfast tips and recipes for you!

Healthy Breakfast Sandwich

What You’ll Need:

  • Two pieces of wheat bread
  • Half an avocado
  • One egg
  • Butter

Grab some whole wheat bread, an egg and an avocado. Toast the whole wheat bread and fry the egg. While you are toasting and frying, cut an avocado and remove the soft inside. When your toast is ready, smear the avocado on it like butter. After the egg is done frying, put it between the two pieces of toast. Garnish with some pepper and voilà!

Healthy tip: To cut some calories, try removing the yolk and just frying the egg whites. Just remember that the egg yolk carries important nutrients, so it is okay to leave the yolk in the egg sometimes!

Smoothie Bowl

What You’ll Need:

  • Frozen fruit (bananas, strawberry, blueberries, raspberries, etc.)
  • Three tablespoons of almond milk
  • One scoop of yogurt (if you choose)
  • One teaspoon of agave syrup
  • Fresh fruit (for topping)
  • A drizzle of honey
  • Coconut flakes
  • Chia Seeds
  • Tablespoon of peanut butter

Start off by making the smoothie base. Depending on the flavor you want your bowl to have, blend your favorite fruits with yogurt and/or almond milk and a touch of agave to naturally sweeten the mix. Top it off with fresh fruit, honey, coconut flakes, chia seeds and a touch of peanut butter. Yum!

Veggie Omelet

You’ll need:

  • Two eggs
  • One tablespoon of skim milk
  • Butter
  • Vegetables (peppers, onions, spinach, mushrooms)
  • Two cherry tomatoes
  • Feta cheese
  • Pepper

Crack two eggs, mix them with skim milk and quickly beat them. Fry mixture in a skillet. While your eggs are frying add some vegetables such as peppers, onions, spinach, mushrooms and tomatoes. Sprinkle a bit of feta cheese on top of the vegetables. When the eggs are solid, flip one side of the other to close your omelet. Finish off with some pepper on top. Bon Appétit!

Tip: Make sure to butter the pan before pouring the egg and milk mixture so your omelet doesn’t stick!

Avocado Pudding

You’ll need:

  • One whole avocado
  • One cup of coconut milk
  • 2 teaspoons of honey (FYI Kourtney Kardashian likes Manuka honey)

The Kardashian’s famous avocado pudding is simple and easy to make and is a great way to start off your day with a dose of healthy. All it takes is an avocado, coconut milk and some honey. Throw it in the blender until it is smooth and enjoy!
