BLT with a Delicious Twist

It’s easy to get stuck in the pattern of making the same recipes for dinner every night — especially in college. Making a meal that’s quick, easy and affordable usually results in a PB&J or chicken and rice.

If you’re getting tired of the same meal, Valley has a twist on the classic bacon, lettuce and tomato sandwich that will give your week just the flavor it needs. A BLT with a garlic aioli and avocado is just what your menu has been missing.

What you’ll need:

Bread (you can use any type of bread, Valley used multigrain)

4 pieces of bacon

Lettuce (you can use any type of lettuce, Valley used spinach)

1 tomato

1 avocado

1 garlic glove

1 egg yolk

2 ½ teaspoons fresh lemon juice

Salt

Pepper

¾ cup vegetable oil

¼ cup extra-virgin olive oil

To make the garlic aioli:

1. Combine the vegetable oil and olive oil

2. Peel the glove of garlic, and sprinkle salt on the clove

3. Using the flat, backside of a knife, smash the clove of garlic until it is a paste

4. Whisk the egg, 1½ teaspoons of lemon juice and 1 teaspoon of water

5. Slowly add the oil mixture until the aioli thickens

6. Add salt, pepper and the remaining lemon juice

To make your sandwich:

1. Lightly toast your sandwich bread

2. Cook the bacon on the stove, in the oven or in the microwave until it is crispy

3. Spread the aioli onto each piece of the toasted bread

4. Add the bacon, tomato and lettuce

5. Slice the avocado and put it on the sandwich
