Chocolate Chip Banana Bread

What You’ll Need:
  • 1 cup brown sugar
  • 1 stick unsalted butter at room temperature
  • 1 egg
  • 1 teaspoon vanilla extract
  • 3–4 very ripe mashed bananas
  • 2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup semi-sweet chocolate chips
What You’ll Do:
  1. Preheat oven to 350 degrees. Place parchment paper into a 9×5 loaf pan and grease with nonstick spray.
  2. Cream together sugar and butter in a large bowl until it is smooth. Begin to whisk in the egg and then add the mashed bananas and vanilla extract until mixture is well combined.
  3. Add the flour, baking soda, baking powder and salt into the large bowl. Mix until combined. Finally, fold in the chocolate chips.
  4. Pour mixture into pan and place in oven for 55–65 minutes until a knife comes out clean from the center.
  5. Let the bread cool for 30 minutes and enjoy!
Glazed Blueberry Lemon Loaf

What You’ll Need:
  • 1/3 cup melted unsalted butter
  • 1 cup sugar
  • 2 eggs
  • 1/2 teaspoon vanilla extract
  • 2 teaspoons grated lemon zest
  • 2 tablespoons lemon juice
  • 1 & 1/2 cups all purpose flour
  • 1 teaspoon salt
  • 1 teaspoon baking powder
  • 1/2 cup milk
  • 1 cup blueberries
  • 1 tablespoon all-purpose flour
For the glaze:
  • 2 tablespoons melted butter
  • 1/2 cup powdered sugar
  • 2 tablespoons lemon juice
  • 1/2 teaspoon vanilla extract
What You’ll Do:
  1. Preheat oven to 350 degrees. Place parchment paper into a 9×5 loaf pan and grease with nonstick spray.
  2. In an electric mixer, blend together the butter, sugar, eggs, vanilla, lemon zest and lemon juice until well combined.
  3. In a medium bowl combine the flour, salt and baking powder.
  4. Slowly incorporate the flour mixture and milk into the electric mixer and mix until smooth.
  5. Rinse blueberries in water and lightly coat with flour. Quickly fold the blueberries into the batter.
  6. Pour batter into pan and bake for 55–65 minutes until a knife comes out clean from the center. Let loaf cool for 30 minutes.
  7. For the glaze, whisk the butter, sugar, lemon juice and vanilla extract. Pour the glaze on top of the loaf and enjoy!
Vegan & Gluten-Free Apple Crumble Bread

What You’ll Need:
  • 1 cup honey crisp apple, cubed
  • 1/2 cup soft vegan butter
  • 1 cup sugar
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground nutmeg
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • 1/2 cup dairy alternative milk
  • Pinch of salt
  • 2 & 1/2 cups gluten-free flour
For the crumble:
  • 2 tablespoon soft vegan butter
  • 2 teaspoon brown sugar
  • Pinch of ground cinnamon
  • 4 tablespoons gluten-free flour
What You’ll Do:
  1. Preheat oven to 350 degrees. Place parchment paper into a 9×5 loaf pan coated with vegan butter and gluten-free flour.
  2. In an electric mixer, beat butter and sugar until smooth.
  3. Add in the cinnamon, nutmeg, baking powder and vanilla extract into the bowl and mix. Pour in dairy milk alternative and mix.
  4. Slowly add the flour and a pinch of salt into the bowl about 1/2 cup at a time until the batter is thick.
  5. Handfold the cubed apples into the bowl.
  6. In a separate bowl, mix together the crumb ingredients. To have large chunks of crumble, mix with your hands.
  7. Pour batter into the pan and top with the crumble mixture.
  8. Bake for 55–60 minutes until a knife comes out clean from the center. Let bread cool for 30 minutes and enjoy!
