Stack Your Gains: Protein Pancakes

here’s nothing like a fresh stack of pancakes on a Sunday morning to satisfy a sweet tooth, but what if VALLEY says there’s a way to satisfy cravings and grow muscles? Protein pancakes are a great combination of a classic homemade recipe with a performance-inducing twist. Packed with nutrients and great flavor, VALLEY is obsessed with this current and trendy recipe.

What You Need
  • 1/2 cup rolled oats
  • 1/4 cup cottage cheese
  • 1/4 cup greek yogurt
  • 1 scoop protein powder (experiment with different and fun flavors!)
  • 1 egg
  • 1/4 teaspoon salt
  • 1/4 teaspoon baking powder
  • 2 tablespoons milk
  • OPTIONAL: Any toppings for the pancakes

Looking for topping ideas? Try adding chocolate chips, maple syrup, greek yogurt, honey, peanut butter or fruit on the pancakes. Adding finishing touches can make these pancakes taste like dessert without the guilt!

What You’ll Do
  1. In a blender cup, blend a half cup of rolled oats into a flour-like consistency. This helps the batter stay smooth and eliminate chunks.
  2. Once blended, add in a scoop of protein powder from any brand. Try different flavors of protein powder to keep the recipe interesting and tasty!
  3. Incorporating the wet ingredients, add a quarter cup of cottage cheese and greek yogurt. Any brand will work, but thicker and unflavored greek yogurt will allow the protein powder’s flavor to shine.
  4. Crack one egg into the mixture.
  5. Add a pinch of salt and a quarter teaspoon of baking powder.
  6. Finish off the mixture by adding a dash of milk to help everything blend together smoothly.
  7. Blend the mixture.
  8. In a large pan, heat your stove to a medium-high heat and spray the pan with any cooking spray/oil.
  9. Pour the batter onto the pan and wait for bubbles to appear before flipping (placing the batter near the center of the pan gets an even cook!)
  10. Using a spatula, flip the pancake and let the opposite side cook evenly.
  11. Plate and add any toppings of choice! Enjoy.
