Something to Snack On: No-Bake Bites

By now, we all know that quarantine can be so boring. Being isolated in one place for a long period of time might be getting old, yet we continue to stay inside our homes to flatten the curve. As for college students, the boredom never truly ends.

Picture this situation. It’s a regular day in quarantine, and you’re just watching the latest Netflix show. You grab endless amounts of junk food to accompany your Netflix binge, thinking that there’s no way you’re going to finish all that food you brought to your living room. Suddenly, hours have passed and you ate all of your food from your Netflix binge. You’re unable to comprehend the fact that you just ate all that food — however, it’s gone! Face it, we’ve all been in this situation before. It’s a relatable situation for all college students: letting Netflix and junk food take over our days. 

Continuous boredom from quarantine leads many to eating endless amounts of junk food, whether they are hungry or not! To satisfy your sweet tooth in quarantine, use this simple recipe to make your own snack bites. These snack bites are guaranteed to hold you over in between meals, and there’s only 94 calories in each bite! How can you go wrong?

What You’ll Need:
  • 1 cup rolled oats
  • ½ cup chocolate chips
  • ½ cup ground flaxseed
  • ½ cup crunchy peanut butter
  • ⅓ cup honey
  • 1 teaspoon vanilla extract

Looking to make your energy bites a bit more…healthy? No problem! You can substitute the chocolate chips for anything else of your preference, just make sure it’s delicious! Here’s some ideas:

  • Yogurt chips
  • Carob chips
  • Caramel chips
  • Peanut butter chips 

Instead of crunchy peanut butter, try substituting with a healthier alternative below that will keep your energy bites tasting fantastic. 

  • Crunchy almond butter
  • Sunflower butter
  • Hazelnut butter
  • Tahini
What You’ll Do:

Step 1: Begin by using a blender or food processor to combine the rolled oats and chocolate chips. Blend them until they form a powder-like substance, which will make shaping the bites easier later. Pour the powder into a bowl.

Step 2: Add in your crunchy peanut butter (or whatever substitute you chose!) and vanilla to the mix in the bowl.

Step 3: Add the ground flaxseed and honey into the bowl, mixing it until fully blended.

Step 4: Take your bowl and place it into the fridge for at least 20 minutes. After 20 minutes, you can take out the mix to create your healthy snack bites!

Step 5: Take a spoon and scoop out the preferred size of your snack bites. You can make them any size you want, big or small!

Step 6: Put the bites into the freezer for about 20-25 minutes, then prepare to serve.
