It’s no doubt that Penn Stater’s love to eat. With many downtown restaurants and popular late-night food items, there’s so much to choose from. But what if we told you that some popular recipes can be made at home in your own kitchen? Valley put together recipes of some of your food favorites from around campus!

Gumby’s Pokey Stix

What You’ll Need
Pizza Dough
½ cup melted butter
¼ teaspoon salt
½ teaspoon Italian seasoning
½ teaspoon garlic powder
½ teaspoon onion powder
2 tablespoons Parmesan Cheese
2 cups Mozzarella Cheese

 

What You’ll Do
1.Preheat oven to 450˚F
2. Roll out dough onto a pizza stone or flat pan
3. Mix all of your ingredients together (keep your mozzarella aside!) and spread on top of dough evenly
4. Sprinkle on mozzarella. You can make this as cheesy as you’d like
5. Bake for 8-10 minutes, or until crust is golden brown and cheese is melted
6. Take a bite of your homemade Pokey’s!

The Corner Room’s Chicken and Broccoli Toss

What You’ll Need
Penne
Chicken Breast
Broccoli (fresh or frozen)
¾ cup Heavy Cream
¼ cup Water
2 tablespoons Butter
1/8 teaspoon Garlic Powder
¼ cup Pesto Sauce
¼ teaspoon Salt
½ cup Asiago Cheese

 

What You’ll Do
1. Bring a pot of water to boil
2. Add penne and broccoli to water and cook for 8-10 minutes, or until al dente. Then, drain and pour back into pot.
3. Meanwhile, cut chicken into cubes. Wash and season chicken with salt and pepper
4. Add oil to a saucepan and place chicken to cook. Check occasionally and flip when the bottom is a golden brown color
5. To make the creamy sauce, mix heavy cream and water in a saucepan on medium heat until hot. Do not let it boil!
6. Add pesto sauce, garlic powder, salt, and butter to a pot. Cook over low heat for 5 minutes.
7. Stir in asiago cheese until melted
8. Add sauce over penne, chicken, and broccoli
9. Dig in!

Insomnia’s Chocolate Peanut Butter Cup Cookie

What You’ll Need
⅔ cup peanut butter
1 cup softened butter
1 cup sugar
1 cup brown sugar
2 eggs
2 teaspoons vanilla
1 teaspoon baking soda
2 ¼ cup flour
½ teaspoon salt
2 cups chopped peanut butter cups
2 cups chocolate chips

 

What You’ll Do
1. Preheat oven to 350˚F
2. In a bowl, mix peanut butter, butter, and both sugars. Beat in vanilla and eggs
3. In a separate bowl, mix in baking soda, flour, and salt
4. Combine both mixtures and stir in peanut butter cups and chocolate chips
5. Form 2 in. balls of dough onto baking sheets. Bake for 10-20 minutes or until you see the edges are lightly browned.
6. Let cool and enjoy!
