Twas’ the day before Saint Patrick’s Day, and all through the valley, every Penn Stater was at McDonalds, ready to rally.
That’s right, VALLEY babes, we are officially in the thick of Shamrock Shake season. The refreshing treat is worth it, especially when it’s not on the menu year-round. But what if you could have a Shamrock Shake whenever you wanted without even having to make the trek to the Golden Arches?
DIY Copycat Shamrock Shake:
What You’ll Need
- 3 scoops vanilla ice cream
- ¼ cups heavy cream
- ½ teaspoon peppermint extract
- 4-6 drops green food coloring
What You’ll Do
- Simply blend ingredients in blender until thick and creamy.
- Top it off with whipped cream and a cherry, and enjoy!

Irish Cream Brownies
What You’ll Need
- 1 package brownie mix
- 1/2 cup Irish cream liqueur
- 1/2 cup vegetable oil
- 2 eggs
- 2 teaspoons milk
- 2 tablespoons Irish cream liqueur
- 1 teaspoon brewed coffee
- 1/2 cup butter, softened
- 2 cups confectioners sugar
- 1 teaspoon vanilla extract
- 1/2 cup toffee baking bits (optional)
What You’ll Do
- Preheat oven to 350 degrees F.
- Grease 9′ x 13′ baking pan.
- Combine and stir brownie mix, Irish cream liqueur, vegetable oil, and eggs.
- Bake for 30 minutes until toothpick is dry and edges start to pull away from sides of the pan.
- For frosting, combine Irish cream liqueur and coffee in bowl and microwave on high until mixture boils. Let cool completely.
- Beat butter, confectioners sugar until smooth, then add vanilla extract and cooled Irish cream mixture. Beat well and spread evenly over the cooled brownies.
