How to Love Your Leftovers

Whether you are still facing mounds of leftovers from Thanksgiving break, or you are anticipating the loads of leftovers that is sure to await you during the festivities of the winter holidays, Valley has you covered with preventing third-day-turkey-blues. Here are some easy recipes that will give a new spin to your favorite leftovers.

TURKEY + STUFFING SANDWICH

This one works best the next day since the turkey is still intact. Toast your favorite type of bread lightly, if you have leftover stuffing, spread it on both sides of the bread to act as a spread. Next, add the pieces of turkey to finish it off. Feel free to add chipotle mayo, tomatoes and lettuce for a twist or keep it simple. Anyway you prepare this, it will be a quick lunch for when you’re on the go!

TURKEY OMELETTE

Want to add some protein to your breakfast? Add some turkey into your morning omelette. The turkey along with tomatoes, mushrooms and onions will have you full until your break between classes. If you are looking for a healthier alternative, try egg whites instead.

SWEET POTATO PANCAKES

This recipe is perfect for lazy mornings. Just mix together 1 1/2 cup of flour, 1 teaspoon of salt, 3 1/2 teaspoons of baking powder and 1/2 teaspoon of nutmeg in a bowl. Once that is mixed together well, add in the mashed sweet potatoes and 2 eggs to form a batter. Proceed to cook it just how you would regular pancakes. Once they are cooked evenly on both sides, add butter and syrup and you are good to go!
